  Domaine  Séailles in Armagnac

The wines organic production certified A.B. by Ecocert France S.A.S.

Rosé, white and red wines are made in a wine storehouse using the very latest pressing and temperature management techniques. It has an original harvesting technique which helps to provide an incredibly short circuit between the harvesting (which usually takes place at night) and the steeping of the grapes. The fermenting cellar is essentially made up of uncovered concrete vats for red wine, and stainless steel tank for white and rosé wine.

                Our wines break down into three ranges of IGP Côtes de Gascogne:

MERLOT



Alcohol : 12,5°


Grape variety :

Merlot 100 %



Winemaking :

Pressed and de-stemmed harvest.

Maceration between 6 and 8 days.

Elevage in unlined concrete tanks of

 a capacity of 50 hectos.

Bottling is done after 6 to 8 months

elevage.

Slight filtering when racked.


Tasting advice:

Fruity notes, sweet mouth with few

 tanins make Cubik an easy drinking

wine. It's best to drink lihgtly chilled.

So it can accompany light meals, snacks

 summer and aperitives.

Serve to about 15°,  don't hesitate

 to cool it by hot weather.

In a cool cellar, aging between 3 and

MERLOT

CABERNET SAUVIGNON

CABERNET FRANC


Alcohol : 13,5°


Cépages :

Merlot 25 %

Cabernet Sauvignon 25 %

Cabernet Franc 50 %


Vinification :

Pressed and de-stemmed harvest.

Maceration between 8 and 12 days.

Different cépages are vinified separately.

Elevage in unlined concrete tanks of a capacity of 50 hectos.

Blending is done after 4 to 6 months elevage.

Slight filtering when racked.

  

Tasting recommendations :

A pronounced perception of red fruit on an  extremely intense tannic base keeping nevertheless a great aromatic freshness, makes this a wine that can accompany most red grilled meats as well as cold pork meats and in particular fresh goat’s cheeses.

Serve at about 16°, do not hesitate to cool slightly in hot weather.

In a cool cellar, aging between 3 and 5 years.

Vinification :

De-stemmed harvest.

Pellicular maceration between 6 and 8 hours.

Elevage in stainless steel tanks on fine deposits.

The wines are assembled in winter.

Light  sulfitage.

Slight filtering when racked.

 

Tasting recommendations :

This light, dry and aromatic wine gives a perception of flowery citrus scents.

It can be drunk as an apéritif but also with shellfish, seafood and white meats.

Its very light rate of sulfite gives it a very pleasant freshness which makes it very digestible.

Serve cool but not chilled.

 

Stocking:

In a cool cellar, aging between 2 and 3 years.

Pellicular maceration around one hour directly in the pneumatic press.

Two cépages are vinified in stainless steel.

Elevage in stainless steel tanks on fine deposits. 

Light sulfitage.

Slight filtering when racked.

Tasting recommendations :

This light wine gives a great, aromatic complexity  with the perception of red fresh fruit scents

It can be drunk as an apéritif but also with     cold pork meats and  grilled meats.

Its very light rate of sulfite gives it a very pleasant freshness which makes it very digestible.

Vinification :

Pressed and de-stemmed harvest.

Maceration around 20 days.

Winemaking only in concrete tanks.

Aging in oak barrels for 12 months then refining in concrete tanks between 2 and 3 months.

Slight filtering when racked.


Tasting recommendations :

Corpulent wine and high power with a tone of candied red fruit flavors and roasting.

Fits on most grilled red meats but also on the game and meat sauce.

Serve between 16° and 18°.

This light, dry and aromatic wine gives a perception of citrus aromas. The Ugni blanc grapes give a light acidity.

Its very light rate of sulfite gives it a very pleasant freshness which makes it very digestible.

Vinification :

De-stemmed harvest and pressed.


Winemaking only in concrete tanks.

Aging for 6 months on light lees.

Tasting recommendations :


 This sweet and aromatic wine give a nose of pineapple Victoria.


 It's drinking young for aperitive also on foie gras and cheese like Roquefort.


Serve cold but not chilled.
